Red Amaranth is a vegetable variety that has been highly valued since the earliest South American civilisations. Today, in Europe, it’s among the most popular for the production of microgreens: in fact, its leaves, which have a bright violet colour and are rich in protein and iron, give beauty and substance to any recipe.
How can I grow it?
Pre-soaking is not necessary, so plant the seeds in the substrate of your choice and leave them in the dark for the first 3/5 days, until they have fully germinated, and water them a couple of times a day. After that, move your organic red Amaranthus sprouts to the light and wait for another 8/10 days. When the microgreens have grown in height and developed their characteristic reddish hue, they are ready to be harvested and eaten.
How can I eat it?
Organic red Amaranth seeds may contain traces of soy, mustard, wheat, gluten and grasses.
